Ingredients

4 servings
  • 1 kilo of shrimp save the shells
  • 1 onion
  • 2 cloves of garlic
  • 1 kilo of tomato
  • 8 guajillo chili peppers
  • to taste of stock of shrimp powder
  • to taste of Salt
  • to taste of black pepper
  • 2 cups of carrot cut into cubes
  • 2 cups of potato

    Preparation

    Brown the shrimp shells in the oven until crispy.
    Cut the onion into pieces and sauté the onion in a saucepan with the garlic and chopped tomatoes.
    Clean the guajillo peppers and remove the seeds. Add the peppers to the previous mixture along with the shrimp shells.
    Add water up to the rim of a pot and add the cleaned shrimp, carrots and potatoes.
    Simmer on low heat for 20 minutes. Add a little shrimp concentrate if necessary.
    Season to taste.

    Para mi que la receta está coja. La cebolla, ajo, jitomates y chiles junto con la cáscara debe licuarse, de otra manera el huajillo resulta desagradable al gusto por su cárcara dura y dificil de digerir. Yo la hice con el camarón sin pelar.
