Preparation
In a large pot combine chicken broth, chicken, salt, pepper and vegetables. Cover and cook over medium heat until it boils.
Lower the heat, add the barley cover the pot and cook for 10 more minutes.
Remove from heat and add spinach, mix and let stand 5 minutes before serving.
