This is a typical cheese from Sardinia, made with sheep's milk and infested with live fly larvae. It has a very strong, almost spicy flavor. Due to the danger it represents, the sale of this cheese is currently prohibited in Italy, but it continues to be produced at home.
Escamoles – Mexico
Speaking of larvae, in Mexico there is a pre-Hispanic dish that consists of larvae from a certain type of ant. Due to the difficulty in finding the nests of these ants and the fact that it can only be done in certain seasons, escamoles are currently expensive and considered a delicacy. They are common in the states of Tlaxcala, Hidalgo, State of Mexico, and Puebla.
Smalahove – Norway
This traditional Norwegian dish is popular during the Christmas season. It consists of a salted and dried sheep's head, sometimes smoked. Although in several countries the heads of animals are consumed, this dish is particular for the way it is served, as it is presented in large pieces that clearly show the animal's face.
Sannakji – Korea
This is one of several raw dishes served in Korea. In this dish, small live octopus pieces are cut and served immediately, usually seasoned with sesame oil and sesame seeds, and sometimes kimchi (a preparation of fermented vegetables, almost always cabbage). To make it even stranger, sometimes the octopus is served and eaten whole. The octopuses often continue to squirm, so eating this dish poses a certain choking risk for diners. This dish is relatively cheap and can be eaten at the Noryangjin Fish Market in Seoul.
