Gnocchi (from Italian gnocchi, the plural of gnocco, ‘dumpling’ and also ‘lump’ or ‘ball’) are a type of Italian pasta made with potato, plantain, or cassava, semolina wheat, flours (which can be corn, chestnut, etc.), and ricotta cheese (with or without spinach). A well-known variety in the regions of Friuli and Trentino-Alto Adige called gnocchi di pane is made with breadcrumbs.
Gnocchi frequently appear under lists of pasta dishes despite having very different ingredients and a different method of preparation. Gnocchi are usually accompanied by tomato sauce, butter, and topped with sage leaves.
Although gnocchi are typical of Italian cuisine, similar dishes can be found in Austrian (Salzburger Nockerln), German, Hungarian, Slovenian, Russian, Argentine, Chilean, Paraguayan, Uruguayan, Venezuelan, and Polish cuisines. (
