A cheesecake is made with cheese and meringue, a dessert made primarily from ricotta or, more commonly, cream cheese, sugar, and sometimes other ingredients such as: eggs, cream, and fruits (usually berries: strawberries, blackberries, blueberries, and even lemons or oranges, etc.); all these ingredients are placed in a crust made of crushed cookies. Certain types of flavorings can be added, such as jam or chocolate.
Some types of cheesecakes are more like tarts than pies, while others are more similar to cakes. Ricotta cheese is widely used in Italy and is blended with other ingredients to achieve a whipped cream-like consistency. Often, the base is more pastry-style, baked, and this cheesecake is much lighter than a traditional no-bake one.
Cheesecake is one of the most common desserts in the world and perhaps one of the oldest that uses dairy, other than milk. The first record mentioning cheesecake dates back to the ancient Greek Olympic Games. Marcus Porcius Cato (or Cato "the Elder") wrote the recipe for its preparation in one of his many Roman cookbooks, called "De Agricultura". (
