Ingredients

24 portions
  • 1 onion, chopped
  • oils
  • 1 cup refried beans, blacks
  • 30 corn leaves
  • 1 1/2 cups Water, tibia
  • 2 cups corn dough
  • 1/2 cups lard
  • 1/2 cups cream
  • 1 cup manchego cheese, grated
  • 1 1/2 cups mass, black

Preparation

Heat a pan and add the onion, wait for it to settle.
Add the black beans and the mole, stir.
Cover the tamales pot with the corn leaves.
Mix the water with the corn dough, butter and sour cream until the desired consistency is obtained.
Place a little of the dough in the corn leaves and in the middle serve two tablespoons of the bean mixture.
Add some grated Manchego cheese.
Roll the tamale and the top, tie it with a bit of the same leaf of corn or with a ribbon.
Add water to the tamales pot and cook for 1 hour or until they peel off the leaves.
Serve the tamales with green or red sauce.
