Preparation
Place the yeast, sugar and a little water in a bowl; Let stand for 5 minutes.

Spread the dough on a well-floured surface and work it until it is thin and elastic to the touch.
Place the dough in a dish, cover with a kitchen towel and let stand until it doubles its volume. Press the mass with your fist to extract the air.
Divide the dough into 12 equal portions, let the muffins rest for a moment, then stretch each one and with the help of a roller form circles of 5 mm thick.
Place on baking trays greased with a little oil and take them to an oven at 250 ° C for ten minutes.
Once the bread is baked, immediately place it between two kitchen towels so that they take moisture and do not get hard.
