Chilaquiles with Seafood

Give your classic chilaquiles a twist and prepare these green chilaquiles with habanero, shrimp, octopus and squid. Ideal for a craving or a morning after the party. You will love it!

Ingredients

4 portions
  • enough oil
  • 500 grams corn tortilla, cut into triangles
  • 14 green tomatoes, in halves
  • 1/2 onions, roast
  • 1 clove garlic, roast
  • 2 habanero peppers, roast
  • 1 cup coriander
  • 1 teaspoon cumin
  • 3 allspice
  • 2 tablespoons butter
  • 1/4 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 1/2 cups shrimp, medium, fresh, shelled and clean
  • 1/2 cups octopus, parboiled, in medium pieces
  • 1/2 cups squid
  • to taste salt
  • to taste black pepper
  • enough cream, at your service
  • enough panela cheese, at your service
  • enough red onion, at your service
  • enough coriander, at your service

Preparation

To make the chips, in a pot with oil, fry the corn tortillas for 5 minutes, or until they change color and become crisp. Drain on absorbent paper and reserve.
In a pot, boil the tomatoes for 15 minutes or until they change color. Then blend them together with the roasted onion, roasted garlic, roasted habanero pepper, coriander, cumin, and allspice.
In a deep skillet, heat the butter and cook the onion, garlic, shrimp, octopus and squid for 5 minutes. Add the sauce, season with salt and pepper, and cook for 10 minutes, Reserve.
Place the chips on a plate, serve the sauce with the seafood and decorate with cream, panela cheese, red onion and coriander. Enjoy.

PRESENTATION

Decorate with cream, panela cheese, red onion and cilantro.

TIPS

You can substitute the habanero pepper for the serrano pepper or the cuaresmeño pepper if you want it to be less spicy.
