Crepes with Starred Egg and Ham

This is a delicious breakfast recipe where you cook in the oven a starred egg on a crepe with ham on top. If you prepare the crepes ahead of time you can have this breakfast ready in just 15 minutes.

Ingredients

4 portions
  • 1 1/2 cups milk
  • 1 cup flour
  • 6 eggs
  • 1 tablespoon oil
  • 1/4 teaspoons salt
  • 4 slices Ham
  • to taste chives, chopped

Preparation

In a blender put milk, flour, 2 eggs, oil and salt. Mix well.
Heat a medium round skillet with a few drops of oil (you can distribute it by the pan with a napkin so it does not get greasy).
Put a little of the mixture in the pan, ensuring that cover the whole pan and cook for about 45 seconds until golden brown on the bottom.
Repeat the same with the entire mixture.
Preheat the oven to 350ºF, or 180º centigrade.
In a baking tray place 4 crepes and put a slice of ham on top of each one. Carefully put an egg on top of each one, and fold the edges of the crepes. Put salt and pepper.
Bake for 12 minutes until the white is cooked. Sprinkle with chopped chives and serve.
