Preparation
In a small skillet heat oil over medium heat and brown onion and spinach for 5 minutes. Season with a little salt.
In a deep bowl beat the egg whites with a little salt until lightly frothy.
Heat a small skillet or omelet pan and cover with a little olive oil.
Pour half of the egg whites and allow it to cook for 90 seconds, with a shovel turn the omelette and let it finish cooking on the other side.
Spoon half of the spinach mixture on one side of the omelet with a spoon and fold it over the mixture.
Remove from the pan and serve with a green sauce.
