Fried Eggs Ranchero Style

This is a popular breakfast dish around Mexico City’s central area. Two delicious sunny-side up eggs on top of a lightly fried corn tortilla, topped with a spicy tomato, serrano pepper, and garlic sauce. This tasty breakfast can be served with refried beans.

Ingredients

  • 4 pieces of tomato for the sauce
  • 1/4 of piece of White onion for the sauce
  • 1 clove of Garlic for the sauce
  • 1 piece of chile serrano for the sauce
  • 1 pinch of Salt for the sauce
  • 3 spoonfuls of oil for the sauce, for the eggs and for the tortillas
  • 4 pieces of tortilla
  • 4 pieces of egg
  • to taste of salt and pepper
  • 1/4 of Cup of fresh cheese to serve
  • to taste of coriander to serve

    Preparation

    o prepare the sauce, heat a griddle over a high temperature and roast the tomatoes, onion, garlic and serrano pepper until they are soft and they appear to be burned. Reserve.
    Blend the roasted ingredients from the previous step for 3 minutes, season with salt, and reserve.
    In a small pot, heat vegetable oil over a medium temperature and fry the sauce. Cook for 20 minutes or until the sauce thickens. Reserve.
    In a pan, heat vegetable oil over a medium temperature and fry the tortillas. Place them on absorbing paper and reserve.
    On the same pan, fry two eggs until they are tender and season with salt and pepper. Place two tortillas on a plate and serve two eggs on top of them. Cover them with the sauce, sprinkle them with cheese, and garnish them with coriander.

    PRESENTATION

    Garnish with sprinkled fresh cheese and coriander leaves.

    TIPS

    To prepare perfect sunny-side up eggs, you can cook two eggs in a frying pan over a medium temperature and cover them while cooking. They will look like they came from a restaurant!
