o prepare the sauce, heat a griddle over a high temperature and roast the tomatoes, onion, garlic and serrano pepper until they are soft and they appear to be burned. Reserve.
Blend the roasted ingredients from the previous step for 3 minutes, season with salt, and reserve.
In a small pot, heat vegetable oil over a medium temperature and fry the sauce. Cook for 20 minutes or until the sauce thickens. Reserve.
In a pan, heat vegetable oil over a medium temperature and fry the tortillas. Place them on absorbing paper and reserve.
On the same pan, fry two eggs until they are tender and season with salt and pepper. Place two tortillas on a plate and serve two eggs on top of them. Cover them with the sauce, sprinkle them with cheese, and garnish them with coriander.
