Spinach Crepes Stuffed with Mushrooms

Give a twist to your traditional crepes and prepare these delicious spinach crepes stuffed with mushrooms, besides being very easy to prepare, they are super nutritious for their high content of iron and vitamins. You have to try them!

Ingredients

4 servings
  • 1 Cup of spinach
  • 1 piece of egg for the crepes
  • 1 1/2 cups of flour for the crepes
  • 1/4 of teaspoonful of Salt for the crepes
  • 2 cups of milk for the crepes
  • enough of cooking spray oil
  • 1 tablespoon of olive oil
  • 1/4 of Cup of onion finely chopped
  • 2 teaspoons of garlic finely chopped
  • 2 cups of mushroom
  • 3 spoonfuls of parsley finely chopped
  • 1/2 Cup of White wine
  • 1 Cup of whipping cream
  • 1/3 of Cup of nut chopped
  • to taste of Common purslane (verdolagas) to decorate
  • to taste of sesame seed to decorate
  • to taste of sunflower seed to decorate

    Preparation

    In a pot with boiling water and salt, whiten the spinach for a minute, place in a bowl with cold water to cut cooking and drain.
    For the crepes, blend the spinach with the egg, flour, salt and milk until a homogeneous mixture is obtained.
    Heat a Teflon pan over medium heat with a little cooking spray. Pour a little of the crepes mixture and spread. Cook about 3 minutes per side. Repeat until you finish mixing and reserve.
    For the filling, heat the olive oil in a pan over medium heat and cook the onion, garlic, mushrooms and parsley. Once the liquid has been reduced, add the white wine and let evaporate, add the cream to beat and cook until thick. Add the walnut, season with salt and pepper and reserve.
    Fill the crepes with the previous preparation. Serve on a plate and decorate with fresh verdolagas, sesame seeds and sunflower seeds.

    PRESENTATION

    Place 3 crepes on a square plate and decorate with verdolagas, toasted sesame seeds and sunflower seeds.

    TIPS

    To make your crepes we suggest you use a pan with Teflon to avoid sticking.
