Ingredients

6 portions
  • 2 cloves garlic
  • 2 tablespoons onion, chopped
  • 1 piece onion
  • 50 grams ancho chili pepper
  • 50 grams pasilla chili pepper
  • 1 kilo beef belly
  • 1 cup chickpea, cooked

Preparation

Cut the previously cleaned tummy in boxes, and cook it in enough water with a clove of garlic, a piece of onion and a spoonful of salt. Let it boil until it is well cooked.
Desvene, toast lightly, soak in hot water and grind chiles.
Fry the onion and garlic, finely chopped, in two tablespoons of butter. When the onion is crystallized add the ground chilies and fry lightly.
Add the pancita with its broth, previously removing the onion and garlic, and add the cooked chickpeas
Let boil for 30 minutes and season with salt.
And ready with some handmade tortillitas, a delight.
