Ingredients

4 portions
  • 10 egg whites, whipped
  • enough Great Value® Extra Virgin Olive Oil in Aerosol
  • 4 ancho chili peppers, seedless and deveined
  • 1 cup whipping cream
  • 2 tablespoons piloncillo
  • 1 pinch black pepper
  • 1 pinch Salt Great Value®
  • 1 cup baby spinach
  • 1 cup Great Value® Pickled Sliced ​​Mushrooms, drained
  • 1/4 cups Extra Special Goat Cheese®, fresh of Sicilian tomatoes
  • 1 avocado, cut into medium cubes
  • 1/4 cups parsley, finely chopped, to decorate

Preparation

Heat a small skillet over medium heat, add the egg whites and cook in an omelette. Remove and reserve.
In a small pot add the wide chili with the cream to beat and the piloncillo, season to your liking. Cook until the chile softens. Blend the preparation until a homogeneous sauce is obtained. Reservation.
Serve the sauce in the form of a mirror on a plate, add the omelet stuffed with spinach, mushrooms, crumbled goat cheese and avocado. Sprinkle with parsley. Enjoy
