Atole is a traditional Mexican drink that is usually consumed to accompany the equally traditional tamales. Atole is a hot beverage that you can enjoy on very cold days; the word comes from the Nahuatl atolli, of pre-Hispanic origin, and is native to Mexico, Guatemala, and other Central American countries. Atole is a drink made from corn flour in sweetened water, which, when prepared, has a thick consistency. Today, we know this traditional Mexican drink in many flavor variations: vanilla, rice, pinole, masa, chocolate, guava, cinnamon, walnut, etc. It can be prepared in different ways, whether sweetened with piloncillo, sugar, or honey, made with milk instead of water; in short, atole has many varieties, and if chocolate is added, it is known as champurrado.
