  • 100 grams walnut
  • 1 teaspoon baking soda
  • 1 teaspoon baking soda
  • 2 cups whole wheat flour
  • 1/2 teaspoons nutmeg
  • 1/2 teaspoons 5 spices seasoning
  • 2 tablespoons cinnamon powder
  • 1/2 teaspoons salt
  • 1 1/2 tablespoons brown sugar
  • 1 cup oil
  • 4 eggs
  • 1 tablespoon vanilla essence
  • 2 cups carrot, grated
  • 1 1/2 cream cheeses
  • 2 tablespoons vanilla essence
  • 1 tablespoon milk
  • 2 cups powdered sugar


Preheat the oven to 200 degrees c. In a medium bowl, combine the flour, the nut, the baking powder, the nut, the baking soda, the nutmeg, the spices, the cinnamon, the salt, and the sugar. Stir with a spoon until all the dry elements are well combined ... in that moment add the freshly grated carrot and incorporate well. In a large bowl, beat the egg, add the oil and the sugar with the blender incorporate all the ingredients until the sugar is well dissolved. Add the flour mixture to the sugar mixture and stir until the ingredients are incorporated, do not mix too much.
Bake at 200 ⁰C degrees for 20 - 35 minutes or until a knife or toothpick comes out clean, allow to cool to decorate. In a bowl, beat the cream cheese until you have a homogeneous mixture. Add vanilla preferably transparent, add the icing sugar until you get a frosting to decorate. To make some carrot figures use artificial colors and with a pastry bag make the shapes of the zigzag carrots.


It uses preferably whole wheat flour to avoid that the carrot stays at the bottom. Preferably use the freshly grated carrot, that helps the cake is not so dry.
