If you're still terrified of baking something, here is a recipe for an easy no-bake dessert. To prepare this recipe for No Bake Cheesecake with Piña Colada. You will need pieces of fresh fruit that will provide the perfect touch. This creamy Piña Colada Cheesecake has a pineapple-flavored crust and is decorated with grated coconut, cherries in syrup, and pieces of fruit. A great tip to prepare this no-bake dessert is to pour the warm gelatin when you are doing the preparation, this will prevent lumps from forming.

Ingredients

10 portions
  • 10 cookies, of pineapple cookies, such as bars, for the base
  • 1/4 cups butter, melted, for the base
  • 1 tablespoon cinnamon, ground, for the base
  • 1/4 tablespoons salt, for the base
  • 1 cream cheese
  • 5 slices Pineapple in syrup, with a little syrup
  • 1 cup sugar
  • enough white rum
  • 1 cup coconut cream
  • 4 cups cream cheese
  • 2 envelopes gelatin, hydrated and melted (7g each) (0.24 oz each)
  • 1 cup whipped cream, to decorate
  • 1 1/2 cups Pineapple in syrup, cut into cubes, to decorate
  • 1 cup coconut, toasted, to decorate
  • enough cherries, to decorate

Preparation

For the base crust, process the pineapple cookies until you get a powder. Add butter, cinnamon, and salt, process again until integrated.
Pour the mixture into a cake mold 20 cm in diameter. Press down and compact with a spoon and cool the base.
Blend cream cheese with pineapple in syrup, sugar and rum to your liking until you get a homogeneous mixture, reserve.
For the cheesecake, beat the cream cheese with the coconut cream until completely integrated. Add the previous preparation and the unflavored gelatin slowly in a thin, threadlike stream. Pour the mixture on the base and spread with the help of a spatula. Refrigerate until set.
Unmold the cheesecake and decorate with whipped cream, pineapple in syrup, toasted coconut and cherries in syrup.
Cut, serve and enjoy.

PRESENTATION

Garnish with pineapple, shredded coconut and cherries in syrup.

TIPS

Temper your portion of gelatin before pouring it into the preparation, thus avoiding lumps.
