Ingredients

12 portions
  • 6 eggs
  • 30 grams powder sugar
  • 40 grams cake flour
  • 10 grams butter, melted
  • 1 pinch liquid vanilla
  • 125 milliliters peach juice, (filling)
  • 1/2 cups egg, (filling)
  • 1 tablespoon sugar, (filling)
  • 1 tablespoon cake flour, (filling)
  • 1 peach, without bone, without shell and crushed (stuffed)
  • 1/2 cups yogurt, (filling)

Preparation

Sift the flour and reserve.
With an electric mixer , beat the eggs with the sugar. Sift the flour in thirds and mix gently in an enveloping way.
Pour 1/3 of the dough into the melted butter along with the vanilla and mix in an enveloping way. Pour the rest and mix gently in an enveloping way.
Pour the mixture on a baking sheet with waxed paper and level the surface with a spatula.
Bake in a preheated oven at 180 ° C for 10 minutes or until fully cooked. Do not overcoat the cake but it will break when rolled.
Remove the tray and remove the waxed paper. Place the cake on a sheet of waxed paper and roll it up. Let cool.
Unroll the cake layer, add the filling and roll it carefully. Cut the ends of the roll and serve.
For the filling: Heat the peach juice until small bubbles appear. Beat the 1/2 egg with 1 tablespoon of sugar, sift the tablespoon of flour until the mixture is smooth. Pour the hot peach juice little by little while stirring vigorously. In a saucepan over medium heat add the mixture together with the yoghurt and stir continuously until the mixture is thick. Transfer to a bowl and cover with plastic wrap. Cool in the refrigerator while preparing the cake.

rollo de durazno c/ yogurt no entiendo: cuando se refieren a 1 1/2 tazas de huevo?!!! se quiebran los huevos y lo que quepa en 1 1.5 tazas? jaja está chistoso. Y la harina para pastel ¿No es la misma harina de trigo? o hay alguna especial para pasteles??
