Enjoy this summer a colorful and refreshing dessert. A soft vanilla cake with an amazing impression; a sweet and exquisite cheese filling, cream and raspberries, is perfect for special occasions.

Ingredients

8 servings
  • 8 pieces of San Juan® egg
  • 3/4 of Cup of sugar
  • 1 teaspoonful of almond essence
  • 1/4 of Cup of Butter melted
  • 1 Cup of flour
  • enough of Red food dye
  • 2 packages of cream cheese for the filling of 190 g c / u
  • 1/2 Cup of cream for the filling
  • 1/4 of Cup of powder sugar for the filling
  • 1 Cup of raspberry for the filling
  • to taste of whipped cream to decorate
  • to taste of lemon peel twist, to decorate
  • to taste of yellow lemon peel twist, to decorate

    Preparation

    Preheat the oven to 180 ° C.
    Separate the pieces of San Juan® Egg in egg whites and yolks.
    Beat the yolks with half the sugar until they change color, add the butter and the essence of almonds, continue beating until they form a quickly dissolving ribbon.
    Beat the whites with the rest of the sugar, until stiff peaks form.
    Fold the whites with the yolks with soft movements; add the sifted flour, continue incorporating smoothly to have a homogeneous mixture.
    Divide a ladle of the previous mixture in a bowl dye. Mix and pour over a pastry sleeve.
    Form an impression on a wax paper and bake for 4 minutes.
    Pour the rest of the mixture and bake for 11 more minutes.
    Place on a cloth with icing sugar and roll while it´s still warm. Make sure the impression is on the outer part of the cake.
    For the filling, beat the cream cheese, the cream and sugar until fully incorporated.
    Unroll the cake, add the filling, raspberries and roll. Refrigerate for 1 hour. Serve and garnish with whipped cream and lemon twist.

    PRESENTATION

    On an extended plate, served with a cup of coffee.

    TIPS

    Add some lemon drops to your withes so they stay firm and more stable. Do not overcook the impression; otherwise it will dry out and won´t stick to the cake. The term to form a quickly dissolving ribbon is when you beat the yolks with sugar; you get a smooth consistency and unrolling without breaking.
