  • 198 grams bittersweet chocolate
  • 1/2 cups unsalted butter
  • 2 eggs
  • 1/4 cups sugar
  • 1/4 cups bourbon, or to taste
  • 1 teaspoon liquid vanilla
  • 1/4 cups flour
  • 1/4 teaspoons baking soda
  • 1 pinch salt
  • 1 cup pecan, lightly toasted
  • 85 grams White chocolate, for frosting
  • 1 tablespoon unsalted butter, for frosting
  • 1 cup powdered sugar, sifting for frosting
  • 3 tablespoons milk

Preparation

Preheat the oven to 176 ° C.
Melt 141 grams of the semi bitter chocolate and butter in a saucepan or bain-marie, stir until smooth. Remove from heat and let it cool completely.
In a large bowl, beat the eggs and sugar until the mixture is thick and pale. Beat with Bourbon and vanilla. Reserve.
Mix flour, baking powder and salt. Add to the egg mixture and incorporate. Stir with the mixture of nuts and chocolate.
Spread the mixture until half in a square mold of 20 centimeters previously greased. Bake for 30 minutes or until the brownie separates from the sides of the pan.
Remove from the oven and let it cool. Smear with White Chocolate Frosting.
Unmold the brownies, cut into 5-centimeter squares and leave on a sheet of waxed paper. Melt the 56 grams of semi-bitter chocolate and decorate it above and on the sides of the brownie.
White Chocolate Frosting: Melt the butter and chocolate in a saucepan or in a bain-marie, stir until the mixture looks smooth.
Remove from heat and let cool completely. Beat with sugar. Slowly beat with the milk until the frosting acquires the desired consistency.
