Preparation
In a medium saucepan mix the sugar, flour and espresso. With a balloon type beater add the milk mixing little by little.
Cook over medium heat, mixing constantly until the milk starts to boil and let it boil for 1 minute. Get out of the fire.
Add the chocolate and butter and mix until they have melted and incorporated into the mixture 100%. Add vanilla and 4 egg yolks and mix well.
Meanwhile pre heat the oven to 180 degrees centigrade. Prepare 8 small soufflé dishes (180 ml) or 1 large 2-liter soufflé dish. Grease with a little butter and sprinkle 3 tablespoons of sugar. Make sure that the entire container (s) is covered with a very light layer of butter and sugar.
In an electric mixer beat the 6 egg whites with a pinch of salt to the point of snow.
From time to time incorporate the egg whites with the chocolate mixture.
Divide the mixture between the 8 small soufflé containers or the large container and bake until the soufflés have grown and their centers are moist. Approximately 25 minutes for small and 35 minutes for large.
Remove from the oven.
