Cold Pineapple Yogurt Cake

Enjoy your summer with a refreshing dessert, low in calories and very easy to prepare. Best of all, it is sweetened with a substitute of sugar and pieces of pineapple, so you can indulge yourself without remorse. It will be impossible to eat just one slice!

Ingredients

6 servings
  • 1 piece of banana
  • 1 tablespoon of orange juice Low in calories
  • 2 cups of Greek yoghurt Low in calories
  • 1/2 Cup of whipping cream
  • 2 spoonfuls of Sugar substitute
  • 1 teaspoonful of vanilla
  • 4 envelopes of unflavored gelatin 28 gram (hydrated and melted)
  • 3 pieces of Pineapple in syrup sliced, cut in half
  • 1 1/2 cups of Pineapple in syrup cut into cubes
  • 3 cups of lady finger
  • 1/2 Cup of coconut toasted

    Preparation

    In a bowl, mash the banana add the low-calorie orange juice and reserve.
    In a blender, beat the low-calorie Greek yogurt, the cream to beat and add the sugar substitute, the crushed banana, the vanilla essence and the unflavored gelatin.
    In a rectangular mold place a layer of soletas, place the slices of pineapple on the sides of the mold. Pour a little of the previous mixture and add the pineapple cubes. Add a little more mixture and the rest of the pineapple. Cover with coconut, place soletas on top and refrigerate for 2 hours, or until set.
    Cut a slice and serve.

    PRESENTATION

    A slice on a plate accompanied by a double cut espresso.

    TIPS

    Once you add the unflavored gelatin, do not beat it too much, as it will begin to curdle.
