Preparation
Beat the butter with the sugar, the egg and the essence.
Mix little by little with the flour, until forming a soft dough, which can be extended.
Spread it thin and cut it into round shapes and the companions of the same size with a hollow in the middle (it is advisable to use a cookie cutter).
Bake at 180 degrees Celsius for 8 minutes.
The bases are covered with jam and the tapas with icing sugar.
These cookies are recommended to put the jam only on the day they are going to eat so they do not soften.
