24 portions
  • 3 cups flour
  • 6 tablespoons cocoa
  • 1/2 teaspoons salt
  • 2 teaspoons baking soda
  • 2 teaspoons baking soda
  • 2 cups raw sugar
  • 1/4 cups Apple sauce
  • 1 avocado, mashed up
  • 2 cups Water
  • 2 tablespoons vinegar
  • 2 teaspoons liquid vanilla, abstract
  • 2 avocados, medium peeled and made pure for glaze
  • 250 grams powdered sugar, for the glaze
  • 2 tablespoons lemon juice, for the glaze
  • 2 teaspoons liquid vanilla, abstract

In a bowl, mix the flour, cocoa powder, salt, baking powder and baking soda.
In another large bowl beat the sugar, applesauce, avocado puree, water, vinegar and vanilla until well blended.
Finally, mix all the dry ingredients with all the wet ingredients at the same time and beat with a whisk (by hand) until smooth.
Pour the mixture into cupcake molds and bake for 18 to 22 minutes, or until a toothpick is inserted, it comes out clean. Let the cupcakes cool completely before putting the avocado glaze on them.
For the glaze
Peel and chop the avocados, scraping the contents in a medium bowl. If the avocados have brown spots, avoid them when you remove the pulp in the dish.
Add the lemon juice and beat the avocados with a blender at medium speed until the avocados have a light consistency, soft texture color, about 2-3 minutes.
Add the powdered sugar little by little finally add the vanilla extract until it is well integrated.
Store in the refrigerator until ready for use.

Once the cupcakes are cold and the glaze done place it with a spatula or a duya and decorate it to taste.

Add the lemon juice avoids that the avocados darken and keep the green color alive.
