Ingredients

40 portions
  • 2 cups flour
  • 1 1/2 tablespoons yeast powder
  • 1/2 tablespoons baking soda
  • 1/4 tablespoons salt
  • 1 1/4 cups granulated sugar
  • 1 1/4 cups greek yogurt
  • 1 egg, slightly beaten
  • 1 lemon zest
  • 1 tablespoon lemon juice, cool
  • 1/2 tablespoons vanilla extract
  • 1 1/4 cups blueberry, fresh
  • 1/2 cups powdered sugar

Preparation

Preheat the oven to 375ºF.
In a large bowl combine flour, baking powder, baking powder and salt, stir and set aside.
In another bowl, stir in the sugar, yoghurt, egg, zest and lemon juice and vanilla. Stir until a homogeneous mixture is made. Add to the mix the other bowl and mix until there are no lumps, add the blueberries.
Grease two trays with butter and put the dough in crushed balls with about 3 centimeters of separation each, sprinkle each with a little glass sugar.
Put them to bake approximately 12 minutes. Pass the cookies to another plate to cool before serving.

PRESENTATION

Sprinkle some icing sugar on top of the cookies for a better presentation.

TIPS

You can serve it with a rich glass of milk.

Fáciles de preparar. Le quitaría la levadura para evitar ese ligero sabor a "pan" y darle más consistencia de galleta. Le pondría más blueberries para intensificar el sabor... Les cuento luego cómo me va con estos dos ajustes :)
