Preheat the oven to 180°C. In a processor, place the flour, sugar, butter, eggs, and vanilla, and process for 3 minutes until the ingredients are combined. Take it out and knead a little with your hands to achieve a smooth and homogeneous dough. Divide the dough into two and color one half with food coloring. Wrap separately in plastic wrap and refrigerate for 15 minutes. Roll out the two doughs to a thickness of 1 cm, trying to make a rectangle. Brush the surface of one of the doughs with a bit of egg and place the other color on top. Roll up and cut into 1 cm thick slices. Brush the roll with egg and coat with colored sprinkles. Cut into 1 cm thick slices. Place them on a baking sheet and bake for 10 minutes or until golden. Cool and serve.
