  • 3 mangos
  • 1 1/4 cups Water
  • 1/2 cups orange juice
  • 1 tablespoon vanilla essence
  • 60 grams gelatin, hydrated and melted
  • 1 cup walnut, roasted and chopped, for filling
  • 1 1/2 cups mascarpone cheese, for the filling
  • 2 tablespoons agave honey, for the filling
  • 3 egg yolks, for the sauce
  • 1/4 cups sugar, for the sauce
  • 1 tablespoon vanilla essence, for the sauce
  • 2 cups milk, for the sauce
  • 2 cups Vanilla cookies, for the crisp
  • 1/4 cups sugar, for the crisp
  • 1/2 cups Hazelnut cream, for the crisp
  • 1/2 cups butter, melted, for the crisp
  • enough raw sugar, to caramelize
  • enough blackberry, to decorate
  • enough peppermint, to decorate
  • enough edible flower, to decorate


For the ravioli dough, blend the mango with water, orange juice, vanilla and grenetina until a homogeneous mixture is obtained. Pour into a tray with a silicone mat or non-stick plastic and refrigerate until set.
Remove the dough from refrigeration and with a circular cutter about 10 cm in diameter cut the dough. Reserve the circles on a tray.
For the filling, in a bowl mix the pecans with the mascarpone cheese and the agave honey. Set aside.
For the sauce, in a bowl beat the yolks with sugar and vanilla with a balloon whisk until incorporated.
Meanwhile, in a pot heat a cup of milk over medium heat, bring it to a boil, then add the mixture of yolks and cook over low heat while stirring, add the rest of the milk and cook until thick. Remove from cooking and let cool immediately.
For the cookie crumble, in a food processor, process the cookies with the sugar, hazelnut cream and melted butter until you get a gritty mixture.
For the assembly, "sprinkle" a little of the English sauce on a plate, place a mango disk on top and in the center one or two tablespoons of the cheese filling. Cover with another mango disk and close up in the manner of ravioli.
Sprinkle with muscovado sugar and caramelize with a blow torch. Decorate with the cookie crumble, blackberries, mint and edible flowers.


Serve the ravioli with the sauce, decorate with the cookie crumble, red fruits, flowers and mint.
