Ingredients

10 portions
  • 1 teaspoon baking soda
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup sugar
  • 2 tablespoons cinnamon powder
  • 3 eggs
  • 2 bananas
  • 3/4 cups unsalted butter
  • 1 teaspoon vanilla extract
  • 1 zucchini
  • 2 1/2 cups flour

Preparation

Preheat oven to 180 degrees. Grease and flour a pancake mold.
Mix flour, baking powder, baking soda, salt, sugar and cinnamon in a large bowl.
Place the egg, bananas, butter and vanilla in the blender. Blend to form a homogeneous puree.
Add the banana puree to the bowl with the flour. Add the grated zucchini. With a spatula, mix everything in an enveloping way until it is well incorporated.
Place the mixture in the pancake mold.
Bake 45 to 60 minutes or until a toothpick comes out clean.

PRESENTATION

Serve your pancake on a nice platter.

TIPS

After grating the zucchini, place it on absorbent paper so that your pancake comes out more spongy.
