Tart with Yoghurt Mousse with Grapes

Make a biscuit and walnut tart, but give it a twist of flavor and texture with this fluffy, creamy yogurt mousse topped with an orange jelly. This cake recipe will be a sensation with people who share it, as it is decorated with natural fruit, so it will be a refreshing dessert for this hot season.

  • 1 cup roasted nut, for the cookie base
  • 1 cup vanilla cookie, for the cookie base
  • 1 cup butter, melted, for cookie base
  • 1 tablespoon Orange zest, for the cookie base
  • 1/2 liters whipping cream, for the yogurt mousse
  • 1 cup natural yogurt, 250 ml, for the yogurt mousse
  • 1 on Yoghurt D'Gari® Gelatin, 120 g, for the yogurt mousse
  • 1 tablespoon Orange zest, for the yogurt mousse
  • 1/2 liters Water, for the orange jelly
  • 1 on D'Gari® Gelatin Orange Flavor, for the orange jelly
  • enough green grapes, in half, to decorate
  • 1 orange, to twist, to decorate
  • enough quinoa, inflated, for decoration
  • enough peppermint, to decorate


For the cookie base, blend the cookies and walnut. Mix in a bowl the ground cookies, the melted butter and the orange zest to form a homogeneous dough.
Place on a cake base, press to compact. Freeze for 1 hour; unmold and reserve.
For the yogurt mousse, heat the whipping cream, add D'Gari® Yoghurt Gelatin and mix until incorporated. Chill and beat until doubled in size; add the natural yoghurt and the orange zest until you have a homogeneous mixture.
Pour the previous mixture on the base of the tart until reaching half the capacity; refrigerate until set.
For the orange jelly, heat the water and dissolve D´Gari® Gelatin orange flavor until incorporated. Let cool and reserve.
Pour over the yogurt mousse to ¾ parts of the capacity of the cake, refrigerate until set.
Garnish with grapes, orange twist, mint, and puffed quinoa; cut a slice and enjoy.


Serve on an extended plate, decorated with grapes and orange twist.


Be careful not to burn the whipping cream when heating it. If necessary, chill the yogurt mousse before whisking.
