Ingredients: 2 cloves garlic, crushed; 1/2 kilos Brie cheese, without the crusts and in cubes; 1 tablespoon cornstarch; 1 pinch nutmeg, freshly grated; 1 cup dry white wine; 1/4 cups sherry wine; salt, to taste; white peppers, to taste

Spread the garlic on the bottom and sides of your fondue pot, leaving the crushed pieces at the bottom. You can also prepare the fondue in a regular saucepan. Add the white wine and sherry and heat over medium-low heat. Toss the cheese cubes in the cornstarch until they are perfectly coated. When the wine is hot, add the cheese. Stir slowly with a wooden spoon at first and then use a whisk. When the cheese has melted, remove it from the heat and grate a little nutmeg over it. Season with salt and white pepper to taste. The fondue should be creamy and coat a wooden spoon. If it looks a bit watery, add more cheese. If it’s too thick, add a splash of wine.
