Delicious Serrano Ham Croquettes

Ideal for snacking, the serrano ham croquettes are a typical appetizer of Spanish cuisine and they are served to you practically anywhere, accompanied by a cold beer or with other appetizers. You will love them!

Ingredients

4 portions
  • 1 cup butter, in cubes
  • 250 grams cured ham, chopped into small cubes
  • 2 cups flour
  • 2 cups milk
  • 1 teaspoon nutmeg
  • to taste salt
  • to taste black pepper
  • 2 cups flour, to flour
  • 2 eggs, to batter
  • 2 cups ground bread, to batter
  • enough vegetal oil, to fry
  • to taste Dijon mustard, To accompany

Preparation

In a saucepan, melt the butter over medium heat and brown the serrano ham. Then add the flour and pour in the milk little by little; cook over medium heat while stirring and until the sauce begins to thicken, use a handheld balloon whisk to incorporate evenly. Switch to a wooden spoon and add the nutmeg, salt and pepper; cook for 10 minutes without stopping stirring and until you get a thick consistency.
Pour the mixture into a container or tray and spread over the entire surface with a silicone spatula, cover with plastic wrap to prevent a crust from forming, let it cool to room temperature and then refrigerate for at least 4 hours.
Once the mixture is solid, remove the plastic, flour and cut strips with a knife; unmold with care. Cut the strips into smaller squares to form the croquettes. Flour your hands to form the croquettes.
Coat the croquettes, pass through an egg and cover with ground bread. Fry in hot vegetable oil for at least 6 minutes, drain on absorbent paper.
Serve and accompany with the dressing of your choice. Also, you can include olives or French fries. We recommend you try them with a very cold beer.

PRESENTATION

Serve on a plate, accompanied by the dressing of your choice.

TIPS

If you rest the croquettes mixture for 24 hours before frying them, they will look more solid and will be easier to handle.
