This avocado dip with edamame is perfect to serve with vegetables or crackers. The mixture of the flavor of the avocado with the edamame is a perfect combination, and the mint and the wasabi give it a surprising touch.

Ingredients

6 servings
  • 1 Cup of edamame fresh or frozen
  • 2 avocados cut with lemon and salt
  • 1/2 teaspoonful of ginger fresh grated
  • 1/4 of Cup of Water
  • 3 spoonfuls of lemon juice
  • 1 tablespoon of olive oil
  • 1/4 of teaspoonful of Salt
  • 1/4 of teaspoonful of wasabi powder optional
  • 1 tablespoon of Fresh mint chopped

    Preparation

    Mix all the ingredients in the food processor until it is a smooth mixture.
    Try it and add more lemon juice and salt as needed.

    TIPS

    It has 8 grams of carbohydrates per serving. If you do not get edamame you can use frozen peas. Just put them in boiling water for 1 minute and add them to the dip.
