Preparation
In a deep bowl, mix water, yeast and sugar. Mix until the yeast and water have dissolved completely. Let the yeast race for 5 minutes.
In an electric mixer , slowly mix the yeast with the flour, salt and 3 tablespoons of olive oil until a dough has formed.
Increase the speed of the blender and beat for 10 more minutes.
Remove the dough, cover with a damp cloth and allow to rise for 2 hours at room temperature.
Pre warm the oven to 220 degrees Celsius.
Knead the dough with small strokes and place in a large glass bowl. Cover with a damp cloth and allow it to grow back for 20 minutes.
With your hands spread the dough all over the refractory and add the olives, cheese and rosemary.
Cover with remaining olive oil and bake for 15 minutes or until lightly browned.
Remove from the oven and serve.
