Preparation
For the Jamaica sauce, boil the water with the sugar and the morita chile; Let it reduce until it thickens and strains.
For the chipotle mayonnaise, mix the chipotle pepper with the mayonnaise and reserve.
For the Mexican sauce, it chops the onion, the tomato and the cilantro; mix with lemon juice, orange juice, salt and pepper.
Heat the oil and sauté the shrimp until tender, add the soy and a little lemon juice. Remove from the fire.
Cut the jicama very thin and form circles that assimilate an omelet, spread a bit of mayonnaise with chipotle, add the shrimp, the Mexican sauce and decorate with pickled onion, chamoy and cubes of mango. Accompany with Jamaica sauce.
