Preparation
Preheat the oven to 180 degrees centigrade.
With a sharp knife, make a cross on the top of each fig, then squeeze the figs gently, so that the fruit opens.
Distribute the blue cheese in the figs, filling each piece on top.
Carefully wrap the figs with two slices of Parma ham, ensuring that they are more or less in half, leaving the upper part uncovered.
Place the prepared figs on a baking sheet and cook 8 to 10 minutes or until the cheese has melted and the Parma ham is crispy.
To serve, divide the arugula leaves into 4 plates. Place the baked figs on top of the arugula leaves.
Sprinkle with balsamic, olive oil and season to taste with salt and freshly ground black pepper.
