In a deep bowl, mash the avocado until it forms a paste or if you wish you can chop it in small cubes. Add the lemon juice so it does not rust.
Place olive oil and a little butter in a pan. When it is hot add the shrimp, let cook until they turn pink. Sauté for five more minutes, season and season to taste.
Spread some of the avocado paste on cookies or baguette bread. Place two shrimp on top and a few leaves of coriander.
