For the vinaigrette: liquefy the olive oil, vinegar, basil, orange zest, salt and pepper, beat until incorporated and form an emulsion. Let stand.
For the tapas: Toast the slices of bread in a pan.
Cut the tomatoes into thin slices, varnish them with the vinaigrette and pass them in a hot pan, on both sides, until they are golden brown.
