Aguachile de Camarón in Mexican Style

Nothing more delicious than a rich and fresh aguachile of shrimp. Accompanied with cucumber, onion, lemon and cilantro. It is perfect for lovers of seafood and for the season of Lent.

Ingredients

6 portions
  • 100 milliliters lemon juice
  • 1 cucumber
  • to taste salt and pepper
  • 1/2 jalapeno Peppers, sliced
  • 3 tablespoons fresh coriander
  • 400 grams shrimp, cleansed
  • 1/2 red onions, sliced

Preparation

Cut the shrimp along without reaching the top, place the shrimp on a flat plate.
Marina with 50 milliliters of lemon juice, salt and pepper. Reserve in cold.
Blend half cucumber, jalapeño, the rest of the lemon juice, cilantro, salt and pepper. Strain and reserve.
Cut the onion into julienne strips, the half cucumber into small cubes and the jalapeño into very thin slices.
Cover the shrimp with the melted mixture and add the chopped vegetables on top.

TIPS

For a perfect marinade make sure to turn the shrimp after 10 minutes for better flavor absorption. You can change the jalapeño for the chili of your preference.
