Preparation
Marinade the fillets in the milk at least 1 hour before cooking.
Remove the steaks from the milk, dry and season with salt and pepper on both sides.
Grease a pan with a little vegetable oil and seal the steaks on both sides over high heat (about 1 minute per side).
Remove the fish from the pan and lower the heat. Add olive oil, garlic, and cook for 2 minutes.
Add white wine, cilantro, and lemon zest. Taste and season with salt and pepper. Heat the sauce until it starts to boil and remove from heat.
Marinade the fish sealed in the sauce and finish cooking in a grill or frying pan for 3 more minutes on each side. Add more sauce on the fish while cooking.
Serve immediately.
