The recipe for fish to the shepherd is a different way of preparing the fish giving it a Mexican touch. Prepare this recipe when you have guests from outside, with this recipe you will not have to give them chili and they will be tasting Mexican food.

Ingredients

4 portions
  • 1 stick achiote
  • 4 guajillo chilies
  • 1/2 cups orange juice
  • black pepper, to taste
  • 2 cloves garlic
  • onions
  • 1 pinch basil
  • 1 pinch thyme
  • salt, to taste
  • 1/4 cups white vinegar, or apple
  • fresh coriander
  • pineapples, in squares
  • 3 Fish fillets

Preparation

Blend achiote, chilies, orange juice, pepper, garlic, onion, basil, thyme, salt and vinegar.
Strain and marinate the fish for 1 hour.
Place everything in a pan. Let the fish cook and finally tear it apart.
Serve with pineapple, and cilantro.
