As a recipe for Lent or for any meal out of the ordinary, this recipe for Pibil Style Cod will be the sensation.

A great tip for cooking cod in this presentation, is to marinate it one night before so that it absorbs the condiments better. You can serve it with pickled onions and banana leaves.

  • 3 liters Water
  • 1 kilo Langa® skinless cod loins
  • 1 cup orange juice, for the marinade
  • 1/4 cups vinegar, for the marinade
  • 1/2 tablespoons cumin, for the marinade
  • 1 tablespoon Dried oregano, for the marinade
  • 50 grams achiote, for the marinade
  • enough banana leaf, grilled
  • 1 cup red onion, for the sauce
  • 2 habanero peppers, for the sauce (roasted and finely chopped)
  • 1/4 cups orange juice, for the sauce
  • 4 tablespoons lemon juice, for the sauce
  • enough salt and pepper
  • enough orange, sliced, to serve


Soak Langa® skinless cod loin in a pot with cold water, let it sit for 2 to 3 days until salt is removed. Changing the water every 12 hours. Rinse and drain.
Preheat the oven to 180 ° C.
For the marinade, liquefy the orange juice with the vinegar, the cumin, the oregano, the achiote.
Pour over the cod and marinate for 30 minutes.
On a oven proof dish place the banana leaf, the cod and cover with the rest of the leaf, bake for 40 minutes or until cooked.
For the sauce, in a bowl mix the onion with the Habanero pepper, the orange juice, the lemon juice and season with salt and pepper.
Serve the cod with the onions and a slice of orange.


On a plate accompanied with pickled onions.
