The base is celery with garlic and shrimp mousse, served with breaded roe and aubergine crunch.

Ingredients

2 portions
  • 500 grams shrimp
  • 250 grams caviar
  • 2 eggplants
  • 5 cloves garlic
  • 4 lime juice
  • 1/4 cups canola oil
  • 100 grams rice flour
  • 1 egg white
  • 5 branches celery

Preparation

Season the shrimp, seal them side and side. Let it rest, in a frying pan put oil to heat, season the fish roe and flour it, fry for a period of 2 minutes on each side.
For the garlic mousse: put the garlic in the blender with salt (to taste), blend, then gradually pour in the oil and the lemon one by one, at the end the white. Continue blending until it has the consistency of mayonnaise.
With the celery previously disinfected and cut, you add a little mousse and a shrimp.

PRESENTATION

Put the canapés together with a bit of the mousse.
