Canapés with Garlic Mousse

The base is celery with garlic and shrimp mousse, accompany with breaded roe and eggplant crunch.

Ingredients

2 portions
  • 500 grams shrimp
  • 250 grams fish roe
  • 2 eggplants
  • 5 cloves garlic
  • 4 lemon juice
  • 1/4 cups canola oil
  • 100 grams rice flour
  • 1 egg white
  • 5 branches celery

Preparation

Season the shrimp, seal them on both sides. Let rest, in a pan put to heat oil, salpimentar the fish roe and flour, fry for a period of 2 minutes on both sides.
For the garlic mousse: put the garlic in the blender with salt (to taste), liquefy, then gradually pour the oil and lemon one at a time, in the end the white one. Continue liquefying until it has the consistency of mayonnaise.
With the celery previously disinfected and cut, add a little mousse and a shrimp.

PRESENTATION

Put the canapés next to a bit of the mousse.
