Season the shrimp with salt and pepper, sear them on both sides. Let them rest, in a skillet heat oil, season the fish roe and coat it in flour, fry for about 2 minutes on each side. For the garlic mousse: put the garlic in the blender with salt (to taste), blend, then slowly pour in the oil and lemon one at a time, finally add the egg white. Continue blending until you achieve a mayonnaise-like consistency.
