These chipotle and mango shrimp are a dish full of flavor and you can prepare quickly and show off with everyone. Its spicy flavor combined with the sweet of the mango make the perfect balance in every bite.

Ingredients

2 portions
  • 6 big shrimp
  • 300 grams Chipotle BBQ Sauce Hunt's ®
  • 1 clove garlic
  • 1 pinch Cayenne pepper
  • 3 mangos
  • 1/3 cups toasted sesame seeds
  • 15 grams grated coconut
  • 1 tablespoon lemon juice
  • to taste salt and pepper
  • 2 lemons, the juice and zest
  • 5 grams ginger
  • to taste sesame oil

Preparation

Marinade the shrimp, peeled and without "vein", in the Chipotle Hunt's ® BBQ Sauce, season with salt, grated rind and lemon juice, for about 20 minutes in the refrigerator.
In a mortar, grind coconut and toasted sesame seeds with a pinch of cayenne pepper. Once ground, add 1/2 cdita. of sesame seeds Reservation.
Remove excess BBQ Chipotle Hunt's ® Sauce through the ground sesame and coconut. Refrigerate for about 10 minutes.
After 10 minutes, bake the shrimp at 175 ° C in a greased tray for 5 minutes or until the crust is golden brown. Reservation.
In a saucepan over medium heat, add oil, onion until transparent, add garlic and chopped ginger, mix a few seconds and add mango, cook until smooth. At that point add BBQ Chipotle Hunt's ® Sauce and cook a couple of minutes more.
Remove from heat, add lemon juice and season.
Allow the mixture to cool and blend.

PRESENTATION

Serve them with rice and a glass of white wine.
