Preparation
Heat the oil and fry the shrimp until they are fully cooked (you will know when their color turns to pink) Reserve.
Grill the chiles (previously hydrated in boiling water), in a pan with hot oil, along with the onion, garlic and tomatoes. Blend together with some of the water where the chiles were cooked and return to the pan over medium heat, let boil for 5 minutes, season.
Dip the shrimp you fry in the sauce. Rectify seasoning.
