We present this recipe for Shrimp in Mango and Chipotle Sauce, which are glazed with a creamy sauce and have a unique flavor. Ingredients

  • 2 mangos, chopped
  • 1/4 cups lemon juice
  • 2 tablespoons I Can't Believe Is Not Butter®
  • 1 tablespoon garlic, finely chopped
  • 2 tablespoons chipotle chili, ground
  • 1 tablespoon ginger, finely chopped
  • 1/4 cups raw sugar
  • enough salt
  • 1/2 cups bacon, finely chopped
  • 3 tablespoons onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 500 grams shrimp, clean and without peel
  • enough salt and pepper
  • 1 tablespoon yellow lemon zest
  • 1 mango, cut into cubes
  • 1 tablespoon chives, chopped, to decorate
  • 1/2 avocados, in slices, to decorate
  • enough yellow lemon, To accompany

Preparation

For the sauce, liquefy the mango pulp with the lemon juice until a homogeneous mixture is obtained.
In a saucepan over medium heat, melt two tablespoons of I Can't Believe Is Not Butter® and cook the garlic until it releases the aroma. Add the chipotle chili, the ginger, the mashed sugar and continue the cooking until the sugar dissolves.
Add the mango pulp and cook until the mixture thickens, season with salt and reserve.
In a pan, over medium heat, cook the bacon until it browns, add the onion and garlic, cook until bright. Add the shrimp, season with salt and pepper, dip in the mango sauce and cook until they are cooked and bright.
Add the yellow lemon zest, the mango cubes, the chives and serve. Garnish with avocado and accompany with yellow lemon slices.

PRESENTATION

Serve the shrimp with chopped chives and avocado. Accompany with white rice.

TIPS

Do not overcook the shrimp so that they are not chewy. When incorporating the lemon zest, do not overcook so that the preparation does not become bitter.
