If you are one of the people who only eat toast as the morning breakfast, we present an excellent recipe for an easy Tuna Pibil Toast. This crispy recipe has tuna cooked in the pibil style, which is ideal to give a twist to the classic tuna recipes. For this typical Mexican recipe you will need to marinate the tuna in sour orange juice or add 2 tablespoons of extra vinegar to taste better.

Ingredients

6 portions
  • 25 grams annatto, for the marinade
  • 1/2 cups orange juice, Sour, for the marinade
  • 1 tablespoon white vinegar, for the marinade
  • 1 clove garlic, for the marinade
  • 1/4 tablespoons oregano, for the marinade
  • 1/4 tablespoons cumin, for the marinade
  • enough salt and pepper, for the marinade
  • 1 1/2 cups canned tuna, drained
  • 1 tablespoon vegetal oil
  • 1 cup refried bean, To accompany
  • 6 Bimbo® classic toasted bread
  • 1 avocado, cut into small cubes, to decorate
  • enough onion, pickled, to decorate

Preparation

Blend achiote with orange juice, white vinegar, garlic, oregano, cumin, salt and pepper.
In a bowl, mix the tuna with the previous preparation and marinate for 10 minutes in the refrigerator.
In a skillet over medium heat heat the oil and cook the tuna for 5 minutes or until the liquid has reduced. Season to taste and set aside.
On Classic Bimbo® Pan Tostados (Toast) spread some refried beans, add the tuna pibil, garnish with avocado and pickled onions.

PRESENTATION

Serve the tuna on the bread and decorate with pickled onions and avocado.

TIPS

If you don't have sour orange juice you can use sweet orange juice and you can add 2 more tablespoons of vinegar. Marinate the tuna longer so that it has more flavor.
