  • 150 grams fresh tuna, in thick cut
  • olive oils
  • sea salt
  • 100 milliliters cranberry juice, concentrate (for cranberry sauce)
  • 1 tablespoon kuzu root starch
  • 1/2 bunches basil, (for basil oil)
  • 100 milliliters sunflower oil, (for basil oil)
  • 100 grams goat cheese, natural (for cheese dressing)
  • 50 grams milk, (for the dressing of cheese)
  • 50 grams whipped cream, (for the dressing of cheese)
  • salt, and white pepper to taste (for the dressing of cheese)


Remove the tuna from the refrigerator so that it is tempered.
For the cheese dressing: blend all the ingredients.
For the cranberry sauce: dissolve the kuzu in the concentrated cranberry juice and then bring the fire to a boil. When this happens, lower the heat to a minimum and continue stirring for five minutes. You will see how the consistency will be increasingly dense. Reservation.
For basil oil: Put the fresh basil leaves for 10 seconds in boiling water. Dry them well. Grind the leaves with the oil, strain and set aside.
For the tuna: since you have left it to temper, heat the oil in a pan, since you see that the oil reached a high temperature, place the tuna and seal it. Take care that the tuna is raw inside. Cut it into medium pieces.


On a white plate, put a little bit of well-distributed cheese dressing, a little of the cranberry sauce, distribute the tuna and add a little of the basil oil. Sprinkle some grain salt.


The kuzu is a root that besides having beneficial properties for health, is used in gastronomy to thicken some sauce without adding any additional flavor. You can find it in health food stores.
