Vegetables Disguised in Macaroni with Cheese

  • 225 grams macaroni pasta elbow, (preferably integral)
  • 1 1/2 cups milk
  • 1/2 teaspoons salt
  • 2 cups cheddar cheese, or grated colby
  • 2 eggs, large (opcionak)
  • 1/4 cups mashed potatoes, white or mashed orange
  • 2 cups cauliflower, cut into florets
  • 2 zucchini, girls (peeled and chopped)
  • 1 teaspoon lemon juice
  • 1 teaspoon Water, (if required)
  • 1 sweet potato, medium sweet potato (peeled and cut into cubes)
  • 3 carrots, medium (peeled and cut into thick slices)
  • 2 tablespoons Water


For white mashed potatoes: Directions: Steam cauliflower over 2 inches (5 cm) of water for 10 to 12 minutes, or until tender. As an alternative, put the cauliflower in the microwave, cover it with water and cook it for 8 to 10 minutes, until it is tender. While waiting for the cauliflower to be ready, beat the zucchini with the lemon juice in a food processor (do not add the water). Drain the cauliflower when it is ready. Add the cauliflower to the zucchini in the food processor, along with a tablespoon of water. Repeat this step several times if you do not fit all the vegetables at once.Back it until it is a soft puree without lumps. If necessary add the second spoonful of water to make the purée softer (but be careful not to leave too much liquid).
For the orange puree: In a medium bowl cover the carrots and the sweet potato with cold water and bring them to a boil for 20 minutes, until they are tender. If the carrots are not fully cooked they will leave pieces of vegetable, which is counterproductive if you intend to hide them in another dish. Drain the sweet potato and carrot and put them in the food processor with two tablespoons of water. Mash until smooth and without lumps so that no pieces of carrots or sweet potatoes remain. If necessary, add a third spoonful of water, but the less water, the better.
Preheat the oven to 375 degrees F. (190 ° C) and grease a 9-inch square (22 cm) mold with butter.
Boil a large bowl of salted water. Add the macaroni and cook until they are firm and they still lack a little cooking. Drains and separates.
In a large bowl beat the milk with white or orange puree and salt (if you use eggs mix and add them too).
Put half of the macaroni in the baking dish and cover with half the grated cheese. Then add the rest of the macaroni in the bowl and bathe with the mixture of milk and puree. Put a last layer of leftover grated cheese, making sure to distribute it evenly.
Bake 30 to 35 minutes or until golden and bubbly. Serves hot


The purée is stored for three days in the refrigerator or you can freeze it in plastic bags or containers, in 1/4 cup portions. Note: Use double the ingredients if you want to make more puree that you can freeze and use later.

duda con el pure No entendi cuando se uso el.otro pure uno se mezclo con la leche y el otro? Gracia se ve deliciosa
