Cucumber Stuffed with Ground Beef

My recipe for cucumber stuffed with ground beef is delicious, it is an adaptation of a family recipe to which I made some modifications. It is a very tasty and simple preparation.

Ingredients

6 portions
  • 6 cucumbers, to fill (caigua)
  • 500 grams ground beef
  • 2 tomatoes
  • 1 onion
  • 1 tablespoon sweet paprika
  • 1 carrot, grated
  • 2 cloves garlic
  • 1 branch celery
  • 5 leaves parsley
  • 2 eggs
  • 1 cup ground bread
  • 2 tablespoons English sauce
  • 600 milliliters milk
  • 1 tablespoon salt
  • 1 teaspoon black pepper

Preparation

Carefully make an opening and remove the seeds that are inside the cucumber.
Apart in a large bowl, add the meat with the crushed garlic and salt to absorb its flavor while you prepare the rest, refrigerate.
Chop the long onion, tomatoes, diced paprika, chop the celery stick and parsley and stir with the grated carrot.
Add all this to the ground meat plus the 2 eggs, the breadcrumbs, Worcestershire sauce and pepper to taste and mix well.
Once everything is well mixed, start filling the cucumbers and seal them with crossed toothpicks so that the filling does not come out.
Apart in a large pot, add the milk and gradually introduce the cucumbers one by one for cooking. Cover the cauldron and cook for 20 minutes.
Once the 20 minutes have passed, remove the chopsticks and serve, if you want you can put a layer of double cream cheese with béchamel sauce and melt in the microwave for 50 seconds.

TIPS

If you have a processor, you can buy the meat clean without fat and chop it yourself.
