The escalivada is a typical dish of Catalonia and Valencia that is quite practical on these hot days. You can eat it alone or accompany it with meats, fish, bread, etc. I like to prepare it and let it rest until the next day, because I have noticed that rest highlights the flavor.

Ingredients

4 servings
  • 2 pieces of Red bell pepper
  • 2 pieces of tomato mature
  • 1 piece of eggplant
  • 2 pieces of onion
  • 4 cloves of garlic
  • 1/2 Cup of extra virgin olive oil
  • to taste of salt and pepper

    Preparation

    Thoroughly wash all the vegetables.
    Pre-heat the oven to 200 ° C.
    Peel and chop the garlic.
    Place the vegetables in the oven tray and add a nice stream of olive oil.
    Put the tray in the oven and let it cook for 50 minutes at about an hour, until the vegetables are well roasted.
    Once the vegetables are roasted, take the tray out of the oven and let it cool down a bit.
    Peel all the vegetables and cut them into strips.
    Place them on a tray and mix well, add salt and pepper, garlic and a stream of olive oil.
    Serve at room temperature, or leave it in the fridge and serve cold.

    TIPS

    The cooking time will depend a lot on the power of your oven, make sure that the vegetables do not burn. You can serve it as an entree or as a unique dish. You can add chopped parsley.
